Below the Surface
There is a door on Person Street in Raleigh’s Oakwood neighborhood that does not advertise what is behind it. No sign. No velvet rope. Just a key — and the understanding that what waits below is worth finding. Bar Sous Terre is the newest concept from Chef Scott Crawford and Crawford Hospitality, and it is unlike anything else in the Triangle. An underground speakeasy-style cocktail lounge built directly beneath Jolie, the French bistro that put this corner of downtown on the map.
The name translates from French as “under the ground” — and that is exactly where you are going. Down the stairs, past the brick walls, into a space washed in amber light where the city above disappears and the only thing that matters is the drink in front of you.
The Space
Designed by Scott and Jessica Crawford on a modest budget with help from friends and family, Bar Sous Terre occupies the former Atlantic Lounge — a members-only speakeasy that operated beneath Jolie for years. The renovation kept the bones — exposed brick, low ceilings, the feeling of being somewhere you are not supposed to be — and layered in warm amber lighting, cozy seating alcoves, and subtle nods to the bar’s snake spirit animal throughout the room.
The music is intentional. ’90s hip-hop one night, reggae the next. Every detail is curated — not because it needs to be, but because that is how Crawford Hospitality operates. The same attention that goes into a dry-aged ribeye at Crawford Brothers or a duck confit at Jolie goes into the playlist and the ice and the lighting at Sous Terre.
The Cocktails
Behind the bar is Beverage Director Jordan Joseph — a veteran of bars like The Crunkleton and the mind behind the cocktail programs across all five Crawford Hospitality restaurants. At Sous Terre, Joseph has built something personal: a menu centered entirely on classic cocktails, made better than you have ever had them.
Take the Sazerac. Joseph starts building it the night before, letting it sit in a freezer for at least twelve hours until the texture hits exactly right. It gets poured into a glass that is completely frosted over, then sprayed with lemon oil and absinthe. The result is a drink he calls one of the best he has ever made — and he has been making Sazeracs for a long time.
The ramos gin fizz is another standout — a labor-intensive drink that most bars skip because it takes real time and real technique to make properly. Joseph makes it the right way. The martinis are served what the team calls the coldest in town — all texture, body, and chill. Even a Negroni gets the full treatment. Cocktails run $14 to $20, and every single one is built to be the definitive version.
How to Get In
Bar Sous Terre operates on a key system. Previous Atlantic Lounge keyholders — your keys still work. New lifetime memberships are available for $50. If you are dining at Jolie or Crawford & Son next door, ask your server — they will walk you down.
