What We Built at Fenton
Crawford Brothers sits in the Fenton district of Cary — a prime steakhouse from Chef Scott Crawford, whose restaurant group was named a 2025 James Beard semifinalist for Outstanding Restaurant Group. Three of the five Crawford Hospitality restaurants — Jolie, Brodeto, and Crawford & Son — hold MICHELIN Guide recognition.
That is the group behind the kitchen. Here is what happens inside it.
The Dry-Aging Room
There is a glass-walled room visible from the dining floor where prime cuts hang for 45 days or more. An in-house dry-aging program built around whole animal butchery — not sourced pre-aged from a distributor, but broken down and aged on site. The fat cap concentrates. The enzymes do their work. The flavor deepens into something a standard cut from a standard supplier cannot touch.
It is one of the only programs like it in the Triangle. You can watch your dinner age while you wait for your table.
The Wine Program
Head Sommelier Mat Brochard and Assistant Sommelier Anita Tingle curate a 37-page wine list — over 300 bottles, 25 wines by the glass, spanning Napa Cabernet, Burgundy, Barolo, Rioja, and a Slovenian orange wine you will not find anywhere else in Cary. The program is built specifically to pair with dry-aged beef and our raw bar. Two sommeliers on staff every service. They are not there to judge what you order. They are there to make your night better.
The Gangster Room
A glass-enclosed private dining room inside the restaurant — visible to the dining room, separate from it. Seats up to 12. Custom menus, dedicated service, and a view of the open kitchen and dry-aging room. For business dinners, rehearsal dinners, or any night where the table matters as much as the meal.
The Kitchen
Open kitchen. Wood-fired grill. A raw bar running oysters, king crab, and shrimp cocktail. Starters like bone marrow and steak tartare. Sides built to hold their own — truffle creamed corn, blistered shishito peppers, wedge salad with Maytag blue. And the steaks: dry-aged prime ribeye, filet, New York strip, porterhouse for two. Each cut from our own aging room, finished on a 1,200-degree broiler.

Crawford Brothers is one of five restaurants under Crawford Hospitality — the 2025 James Beard semifinalist group that also includes Jolie, Crawford & Son, Brodeto, and Bar Sous Terre. Five concepts across Raleigh and Cary. Each one different. Same standard.
Whether that makes this the best steakhouse in Cary is not for us to say. But we will put the aging room, the wine list, the kitchen, and the team up against anyone.
